Healthy Mac and Cheese  

Mac and cheese is a classic kid favorite, but with a few healthy tweaks, it can be a great source of carbohydrates and proteins.

Ingredients 

-1 cup (250ml) of 2% milk
-2 tablespoons (30ml) of all-purpose flour
-3/4 cup (175g) of mild cheddar cheese, shredded
-1/4 cup (50g) of feta cheese
-1/4 teaspoon (1.25ml) of garlic powder
-1/2 teaspoon (2.5ml) of salt
-1/4 teaspoon (1.25ml) of black pepper
-2 teaspoon (10ml) of extra virgin olive oil
-8 ounces (225g) of elbow macaroni
-2 tablespoons (30ml) of Parmesan cheese

Directions 

Step 1: Preheat the oven to 375°F (190°C), and lightly grease an 8-inch (20-cm) square baking dish.

Step 2: Bring a large pot of water to a boil. Add the macaroni and cook for 10-12 minutes until it is tender. Drain, and set aside.

Step 3: In a medium-sized pot, heat the oil over medium heat. Add the garlic powder, salt, and black pepper and cook for 1 minute or until fragrant.

Step 4: Whisk in the flour until combined then slowly pour in the milk and whisk until mixture is smooth. Cook for 3-4 minutes or until mixture is thick and bubbly, whisking occasionally.

Step 5: Reduce the heat to low and stir in the cheddar and feta cheese until melted and smooth.

Step 6: Combine the cheese sauce with the macaroni and pour into the baking dish. Sprinkle the Parmesan cheese on top.

-1/2 cup (75g) of bell pepper, diced
-1/2 cup (80g) of mushrooms, diced
-1/4 cup (25g) of onion, diced
-2 tablespoons (20g) of diced jalapeño, optional

-4 cups (285g) of shredded cheese of your choice
-8 whole wheat tortillas

Directions 

Step 1: Preheat the oven to 400°F (200°C).

Step 2: Heat a large skillet over medium heat. Add the oil and the diced vegetables, and sauté for 5 minutes or until softened.

Step 3: Place one tortilla on a baking sheet lined with parchment paper and sprinkle 1/2 cup of cheese over it. Top with 1/2 cup of the cooked veggies and another 1/2 cup of cheese.

Step 4: Top with another tortilla and place in the oven. Bake for 10 minutes or until the cheese is melted and tortillas are golden brown.

-4 tablespoons (60ml) of butter, softened
-4 slices of provolone cheese
-4 slices of cheddar cheese
-1/4 teaspoon (1.25ml) of garlic powder

Directions

Step 2: Spread one side of each slice of bread with butter and place butter-side down on the hot skillet.

Step 3: Layer the provolone and cheddar cheese slices over the bread, sprinkle with garlic powder, and top with the remaining bread slices, butter-side up.

-1 lime, quartered

-1/2 teaspoon (2.5ml) of salt
-1/4 teaspoon (1.25ml) of black pepper
-2 teaspoons (10ml) of Worcestershire sauce
-1/2 cup (115g) of sour cream
-1 (16oz) package of lasagna noodles
-2 cups (225g) of mozzarella cheese, shredded
-2 tablespoons (30ml) of freshly grated Parmesan

Directions

Step 1: Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch (23×33-cm) baking dish.

Step 2: Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook for 3-4 minutes or until softened.

Step 3: Add the ground beef and cook, breaking it apart with a wooden spoon until it’s no longer pink.

Step 4: Add the crushed tomatoes, Italian seasoning, salt, pepper, and Worcestershire sauce and bring to a simmer. Simmer for 10 minutes.
